Cheese Chips & Guacamole

Cheese Chips:

  • 1 block of cheddar cheese
  • Parchment paper
  • Baking sheet

Guacamole:

  • 1 Avocado
  • 1 Roma Tomato
  • 1/4 White Onion
  • 1 Lime {or lime juice}
  • Cilantro to taste
  • Salt and Pepper to taste
  • 1-2 tsp crushed red pepper {depending on how spicy you want your guac}

Instructions:

  1. Shred the cheddar cheese and spread out evenly on a baking sheet lined with parchment paper. Set the oven to 350 degrees.
  2. Place in the oven for 10-15 minutes. Cheese should be bubbling before it is ready.
  3. When the cheese is done, take the baking sheet out of the oven and let cool.
  4. With a pizza cutter, cut bite size pieces and separate.
  1. Dice the avocado, tomato and onion.
  2. Before cutting the lime, roll it on the counter {pressing down hard} to soften it and release the juices. After it gets to the point where you can easily squeeze it, cut it in half and squeeze the juice over your avocado, tomato and onion mix.
  3. Place the mix into a food processor and blend until combined.
  4. Add the remaining ingredients and mix thoroughly.
